An easy homemade snack made with just a handful of pantry ingredients, you’ll love having a batch of Lemon Poppy Seed Granola on hand! Use it for snacking, topping yogurt, or smoothie bowls!

If I’m not stopped, I can eat all the granola at home. I love the crunchy texture and it’s easy to just keep moving my hand from the jar to my mouth until it’s all gone. So it is easiest for me to whip up a batch whenever I’m craving it than inhaling a large bag the moment I buy it. It’s also much cheaper lol.

  • It has a bright and refreshing flavor from the lemon. It’s not overly sweet, and it’s not overly lemony. It’s a nice balance.
  • It’s super easy to make, and it only takes a couple of minutes to put together.

What You’ll Need

  • honey — or maple syrup.
  • nut butter — try my homemade peanut butter!
  • lemon — both the juice and the zest
  • vanilla extract
  • old fashioned rolled oats
  • raw cashews
  • poppy seeds
  • salt

How to Make Lemon Poppy Seed Granola

  • Heat the oven to 300°F.
  • In a bowl, combine honey, nut butter, lemon juice, and vanilla extract. Stir until it is fully mixed together.
  • Add in the old fashioned rolled oats, raw cashews, poppy seeds, and salt to the nut butter mixture. Mix until everything is combined.

  • On a lined sheet pan, spread out the granola. Sprinkle the lemon zest on top and bake the granola for 15 minutes. Stir the granola and bake for another 15 minutes. Stir again.
  • Turn the oven up to 350°F and bake for 5 to 6 minutes. Keeping an eye on it.
  • Once done, let it cool before enjoying or packing away.

Tips and Notes

  • If the granola looks a little soft coming out of the oven, not to worry, it’ll firm up as it cools.
  • Feel free to swap the cashews for any type of nuts you have on hand.
  • I suggest sticking with freshly squeezed lemon juice. Bottled lemon juice doesn’t have the bright flavours in comparison.
  • Be sure to keep stirring as you don’t want the edges to crisp up too fast.

Make Ahead Tips

  • Meal prep: store the cooled granola in an airtight container for up to 3 to 4 days at room temperature. It can last a few extra days in the fridge but it’s usually gone by day 4! I also like to portion it out into small mason jars so I can bring it along with me as a snack on the go.
